Recipe: Low Carb Pepperoni Pizza Chips

Craving pizza?  Then this is the perfect low carb snack for you!  And to make it even better, it's quick and easy to prep!   Simply place the pepperoni on a baking pan and put in the oven at 425 for 10 minutes.  Then pull out of the oven and top with mozzarella cheese.  Bake for another 2-4 minutes until cheese is melted and pepperoni is crispy.

I store mine in a rubbermaid in the fridge and dip into cream cheese for an amazing almost 0 carb snack!

Deer Rice Bowls With Gwaltney Hotdogs

My kids love to help make dinner, which sometimes makes things more stressful at dinner time, but with these fun rice bowls, kids can help "decorate" their deer and get involved with the food preparation process.  With the hectic schedules as kids are back in school, we love things that are quick to make and fun to eat.  And as a plus, this is something the whole family will love.

These Gwaltney Hotdogs are also great for kids with allergies.  Mine are allergic to milk, eggs, beef, wheat and peanuts, so finding meals they like can be challenging.  Gwaltney hotdogs, however, are perfect because they're made from chicken and don't contain any of their other allergens!

You can also get creative with these hotdog deer bowls.  You can use corn, peas, grape tomatoes, or any other small vegetable or bean for the eyes and nose.  
Ingredients:
1 package Gwaltney Hotdogs
1 can black beans
3 cups cooked rice (white or brown)
Ketchup (optional for dipping)

Serves: 8

Directions:
Fill bowls with white or brown rice.

Use black beans for the eyes and nose.

Take 1 hot dog and cut in half.  Cut slits in the ends 3/4 of the way down to make the antlers.

Add a side of ketchup for dipping.

ALOHA: Vegan Protein Powder + Banana Nut Protein Muffin Recipe

Banana Nut Protein Muffins
Ingredients

  • 2 cups almond meal flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt

  • 3 ripe bananas
  • 2 cage-free eggs
  • 1/2 cup fat free Greek yogurt
  • 1/2 cup sunflower seed oil
  • 1/3 cup of chopped raw walnuts

Preparation
Preheat your oven to 350 degrees. Spray a muffin tin with non-stick cooking spray or fill with muffin wrappers. In a large mixing bowl mash the bananas with a fork or whatever works. Mix in the eggs, yogurt, and sunflower seed oil. Stir vigorously for about two minutes, or until the mixture is smooth. In a separate bowl combine the drying ingredients. Make sure there are no lumps. Add dry ingredients to banana mixture and stir until dry and wet ingredients are well mixed.

Scoop the batter into the prepared muffin tins. Top with the chopped walnuts. Bake for about 20 to 25 minutes or until a toothpick comes out clean.

Cool for five minutes then remove to a wire rack to finish cooling. 

Enjoy!

SLOW COOKER SUPER BOWL OF BEEF CHILI
Ingredients
1-2 lbs lean (90%) ground beef
1 jar (24 oz) Jesben® Italian Tomato, Peppers & Herbs Slow Cooker Sauce
1 can (approx. 15 oz) red kidney beans (rinsed and drained)
1 can (approx. 15 oz) pinto beans (rinsed and drained)
3 T chili powder
1 T ground cumin

Instructions
Place meat in slow cooker.
Add beans.
Sprinkle spices over beef and beans.
Pour entire jar of Jesben® Italian Tomato, Peppers & Herbs Slow Cooker Sauce on top of meat, beans and spices. Cover and cook on low for 8-10 hours or high for 4-5 hours or until meat is fully cooked.
With large spoon thoroughly stir cooked chili, breaking up ground beef into chunks and then into smaller pieces with back of spoon. 
Serve in bowls and enjoy!
Makes 8-10 servings

SLOW COOKER TURKEY CHILI
Ingredients
1-2 lbs ground turkey
1 jar (24 oz) Jesben® Italian Tomato, Peppers & Herbs Slow Cooker Sauce
1 can (approx. 15 oz) black beans (rinsed and drained)
1 can (approx. 15 oz) yellow corn kernels (rinsed and drained)
3 T chili powder
1 T ground cumin

Instructions
Place turkey in slow cooker.
Add beans.
Sprinkle spices over turkey and beans.
Pour entire jar of Jesben® Italian Tomato, Peppers & Herbs Slow Cooker Sauce on top of turkey, beans and spices. Cover and cook on low for 8-10 hours or high for 4-5 hours or until meat is fully cooked.

SLOW COOKER VEGETARIAN CHILI

1 lb chopped portobello mushrooms
1 lb diced extra firm tofu

1 can (approx. 15 oz) cannellini beans (rinsed and drained)
1 can (approx. 15 oz) dark red kidney beans (rinsed and drained)
3 T chili powder
1 T ground cumin

Instructions
Place mushrooms and tofu in slow cooker.
Add beans.
Sprinkle spices over veggies and beans.
Pour entire jar of Jesben® Italian Tomato, Peppers & Herbs Slow Cooker Sauce on top of vegetables, beans and spices. Cover and cook on low for 6-8 hours or high for 3-4 hours.
Stir thoroughly and keep warm in slow cooker until ready to eat.
Serve in bowls and enjoy!
Makes 8-10 servings

Note: If you prefer less heat, chili powder can be reduced in any of these recipes by 1 tablespoon. On the other hand, if you like your chili hot, add a dash of hot sauce or cayenne pepper to taste. Also, feel free to get creative with your ingredients!
